Hi friends!! Since March, I have taken y’all along with me through my bread baking adventures on my Instagram stories and I am so excited to share this recipe. This recipe is especially special because my grandma grew up making it in Switzerland.
Zopf Bread recipe
Makes 2 big loaves or 3 smallish ones (still a good-sized loaf)
Ingredients:
- 7 cups flour
- 1 tbsp salt
- 3 cups milk
- 1 tsp sugar
- 2 tbsp active dry yeast
- ½ cup butter
- 1 egg for brushing
Directions:
- Add active dry yeast to 1 cup of warm water- wait for it to foam (add 1 tsp of sugar to yeast)
- Mix the flour & salt in a large bowl
- Warm the milk so it’s lukewarm
- Add the yeast to the warm milk
- Soften butter
- Add butter & milk mixture to the flour mixture & mix until combined
- Knead dough for 10 minutes. Add flour as needed. Keep in bowl to rise.
- After 1 hour, remove the dough from the bowl & weave it into loaves. It can take some time to know how to braid with 2 strands (This is the video I watched until I was about to braid it on my own).
- Place loaf onto a cooking sheet, brush the load with water & let sit for another 30-60 minutes
- Preheat oven to 400 degrees
- Whisk together the egg. After 30-60 minutes, brush the loaf with egg
- Bake the bread for 25-30 minutes or until golden brown
Supplies Needed: These are the supplies I use, but any will work.
- Baking sheets
- Mixing bowls
- Treasuring cups and spoons
- Flour sack towels
- Kitchenaid Stand Mixer (this not needed for kneading but makes the process faster)
